Happy Valentine’s Day everyone!
There were no plans for K and I this year. To be honest, I was more than a little disappointed – I was expecting maybe a single rose stalk or maybe even a card with something sweet written in – but, nope, nothing. He claimed that he had booked a dinner for us but it didn’t work out because I’d gone there the day earlier with my girlfriends and wouldn’t want to eat the same thing.
Then he claimed that he’d been trying to get for me an MCM bag I’d expressed admiration over but it was sold out everywhere. So I guess he gets an A for effort and nothing for actual results. I personally feel that even if all his plans fell through .. would it really be too much to ask for for a little romantic gesture, even if it were just cooking a small meal for me? Again, he claims that he can’t cook.
I don’t know about you, but I hate it when people try to manage my expectations or give me long explanations about why things didn’t work out the way they wanted them to. I’m not usually so candid in my posts but I was fairly bitter with disappointment earlier today. I guess there’s really nothing I can do but pretend it’s okay and that we’re saving up for our Italy trip later this year.
In other things, I’ve been on a weight loss offensive post CNY binge! Word of the day is detoxification ! I’ve been putting as little makeup as possible – in the photo above with Benjy, I had no makeup on at all ! I felt very exposed at first, but the comfort level was just through the roof – now I’m just going to work on making my complexion as good as possible so I can eventually wean myself off everything except sunscreen.
In terms of what I’m taking in, I’ve also been aggressively flushing out all traces of those pineapple tarts and rich butter kueh lapis.
Here’s my secret weapon !
Pomegranate “Micho” collagen from CJ foods! Just mix it 1:4 parts into boiled cooled water and add ice for a refreshing all day thirst quencher. I received it in a CJ food hamper given to my Dad so I’m quite worried about how I’m going to replenish my supply but I think I could easily replace it with other fruit vinegars from Taiwanese brands or simply with Apple Cider Vinegar.
It makes me feel really clean inside and the tangy refreshing taste is helping me drink more water than ever! I’m the type who hates the taste of plain boiled water -_-
Today, however, I succumbed to a really fattening home-made 20 minute lunch – a little casserole of Truffled Mac and Cheese decadence !
It’s so easy to make, too ! Try it yourself! ^^
Truffled Mac and Cheese for one very hungry girl
Boil 2 handfuls of elbow macaroni pasta in boiling water already oiled and salted. Heat up oven on high to 180 degrees celsius.
Melt 1 tbsp of butter into a medium-heat pan. After melted and bubbling slightly, at 1 and 3/4 tsp of flour and make a roux. When roux turns golden brown, slowly add 3/4 cup of milk, stirring all the while. To this milk sauce melt in 1/2 cup of shredded cheddar and mozzarella cheese, and then 2 tbsp of grated parmesan. When done, add 1 tsp of good quality white truffle oil.
Mix pasta and cheese sauce in casserole and sprinkle with paprika (optional). Bake for 15 minutes, sprinkling on breadcrumbs if you like. You don’t need to bake it if you don’t want too – I sometimes love my mac and cheese wet and gooey and piping hot too!
If you use low-fat milk and control your portions, it should only work out to about 200 calories a portion. 🙂
