Haha the title is self-explanatory but yes, my beloved little sister is back in Singapore for just a little while before she disappears to the UK to start law school and she’s staying with me !
I’ve been asked on ask.fm quite a few times about what exactly I’m talking about so cryptically in my former posts but I hope you guys can understand that I will talk about it when I can (and I will, soon!) but save to say, I think it’s pretty obvious what I mean already so.. read between the lines !
I spend most of my days at home now, cooking, reading all the books I’ve never had time to read, taking long naps, and being a general layabout. From time to time I meet up with friends for coffee, lunch or dinner but that’s about all the activity I can do for now. I’m hoping that as time passes things will get better and I will feel well enough to have a semblance of a full, useful life again.
What I’m going through now .. is a happy problem. But on bad days, I fling my phone into a corner or somewhere I won’t be able to hear it, lie in bed on my side, and just try to breathe and be comfortable while waiting for the splitting headaches and body aches to stop. And times like that, you only really want to see your family (it scares my husband to see me when I’m having my low moments).
So I’ve brightened up hugely by the arrival of my greedy little sister, who is seven years younger but already taller than me (and has been, for a while but I have only recently gotten over my denial).
In fact, thanks to her, after a week of eating terrible meals of cheese toasts, peanut butter and jelly sandwiches, pasta with canned sauce and takeaways, I finally found the energy this morning to make and eat a proper full brekkie. It was really uplifting for me when she bustled back from the nearest super with a bagful of fresh croissants, ham and a new loaf of bread. 🙂
I think breakfast was extra good this morning. We had my mum’s stuffed ham and cheese croissants (so easy but so divine), a ramekin of blueberry cereal smothered in fresh blueberries and my signature truffled scrambled creamy eggs!
Here’s our recipe for the stuffed croissants !
Mama’s Stuffed Breakfast Croissants
2 fresh (and large) French butter croissants
3 slices picnic ham (or any ham) sliced into fine shreds
Handful of shredded mozzarella, cheddar and parmesan cheese
2 tablespoons Kewpie Mayo / Miracle Whip
4 tablespoons full cream milk
Slice croissants sideways and open up a “pocket”
Mix ham, cheese, miracle whip, and milk together loosely in a bowl until combined.
Stuff mixture into croissants
Toast until cheese is melted and filling is gooey
Eat immediately. Best served with mugs and mugs of hot milky Earl Grey Tea
